We had some bananas on the counter that I just knew weren't going to be eaten before they were a complete loss so I busted out the cookbooks and looked for a recipe. I knew I wanted banana bread but I didn't want
Yes, I'm weird and I love banana pudding, banana breads, and banana cake (which I have a recipe I'll be trying soon)...But I hardly ever eat just a plain old banana.
I'll cut to the chase now.
Cinnamon Sugar Banana Bread
What you need-
4 very ripe bananas, mashed up
1/3 cup melted butter
1 cup sugar
1 egg
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
1 1/2 cup flour
See that red bowl? Mix 1/3 cup of sugar with 1 tbs. cinnamon in a small bowl and set aside.
Preheat the oven to 350 degrees and grease a 9X5 loaf pan.
Next, peel the bananas and throw them in a bowl. Mash them really good with a fork.
Now melt your butter, I just stuck mine in the microwave for a few seconds.
Ok, now you're ready to roll...Mix the bananas, butter, sugar, egg, and vanilla with a rubber spatula. No mixer needed.
Ok, there. Now, sprinkle the baking soda and salt on top of this mixture. Next, slowly stir in the flour...stir until well blended, but don't over stir!
Mix the sugar and cinnamon that you sat aside in the smaller bowl together. I just used my fingers, don't worry they were clean!
Add half of the batter into the loaf pan.
Sprinkle the cinnamon sugar mixture over the batter.
Then, pour the rest of the batter over the cinnamon sugar!
Bake for 45-50 minutes. When it's done let it cool in the pan for ten minutes then let it finish cooling on a wire rack. I cooked mine the lesser time because I was in a hurry, so it was a little mushy in the center but it was still good! As long as a toothpick inserted in the center comes out clean then it's done enough. That's my rule anyway.
*This bread is SUPER sweet. Don't make it if you live with your diabetic grandpa because then you feel guilty when he eats it because it's staring him in the face.
Otherwise make it...because it's really freakin' good. Chris doesn't much care for regular banana nut bread but he ate this.
