(Crock Pot) Chicken Teriyaki

Since I'm working mornings (7-1) and then taking my grandma to her cancer treatments (2-5) I'm kind of obsessed with easy meals. Easy meals that I can throw together at 6 in the morning and not worry about all day are my best friend right now.

I don't have time to cook. And I absolutely don't want to get stuck in the fast food rut again, so I've been trying out every crock pot recipe that comes my way. Here's a recipe I found for Chicken Teriyaki. It was really good, next time along with the brown rice, I'll add some veggies. 

(Crock Pot) Chicken Teriyaki

What you need-
1-2 pounds boneless skinless chicken breasts
1/2 cup sugar
1/2 cup soy sauce
2 tablespoons apple cider vinegar
1/2 teaspoon ground ginger
1/2 teaspoon minced garlic
1/4 teaspoon pepper
2 1/2 teaspoons cornstarch
2 1/2 teaspoons cold water
Cooked brown rice, and whatever veggies you might want to add.



What you do-

Rinse/dry chicken and put it in the crock pot. In a bowl, combine sugar, soy sauce, vinegar, ginger, garlic and pepper. Pour the sauce over the chicken. Cover the chicken and cook on low for 4 or 5 hours. (Mine went a little longer than that and it was fine). 

Next, remove chicken from crock pot. Place the sauce in a sauce pan and bring to a simmer. Combine corn starch and water in a bowl until smooth. Slowly add the mixture to the sauce. This will thicken it. If the sauce is too thick for your liking, add a bit more water...I'd say a teaspoon at a time.

Serve chicken over rice (with veggies!) with sauce on top.

I cooked this a few weeks ago, and I did add up the WW points, but I forgot, I think the chicken, sauce and rice combined was 10 points, not sure of the serving size though.
