Cheddar Chicken Bacon Ranch Pasta
What you need-
1/2 pound whole wheat penne pasta
4 slices bacon, diced, cooked until crispy
1/2 Tbsp light butter
1 large chicken breast, cut into bite sized pieces
1 Tbsp AP flour
1/2 pkg (1/2 oz) ranch dressing mix
1 c fat free milk
1/2 c fat free shredded cheddar cheese
Salt and pepper to taste
What you do-
Cook pasta until al dente.
Fry up the bacon, if you haven't already. Drain all but 1/2 tablespoon of bacon fat. Leave it in the pan.
Season the chicken with salt and pepper. Add butter to the bacon drippings in the skillet. Add chicken to the skillet and cook until done.
Sprinkle the flour and ranch dressing mix over the chicken, make sure all of the chicken is covered. Stir in the milk, and stir occasionally until the sauce becomes a bit thick and bubbly.
Stir in the cheese and half of the bacon. Cook/stir until cheese is melted.
Serve with reserved bacon on top.
This makes 4 servings and is 10 ww pp per serving.
I served mine with a salad. The boys loved it.
