Hot and Sweet Drumsticks
What you need:
1 cup apricot preserves
1/2 cup ketchup
1/4 cup soy sauce
1/4 tsp. garlic powder
2 tsp. hot pepper sauce
3 lbs drumsticks (I only used a pound and a half, but still made the full amount of sauce)
First, preheat your oven to 350 degrees. Then, I always rinse and dry my chicken before cooking. Next, dump the first five ingredients into a saucepan and cook on low until the preserves melt.
While that mixture is melting together, lay your drumsticks into a dish in a single layer.
Check on your sauce, stir it periodically. It looks like this when it's done:
Coat the chicken with the sauce and place in the oven, uncovered for 45 minutes to an hour.
Half way through the cooking time, baste the chicken so it doesn't get all dried out.
(This is half way through)
When they are done they look like this-
I couldn't get into it. I think it was the whole bone-in-the-chicken thing. And, I prefer white meat. The sauce smelled funny to me too but like I said, I've been having these weird smell/taste things recently. Chris LOVED this chicken, but he LOVES dark meat, and bones, and hot dogs. Ew.
Moving on.
French Onion Oven Fries
What you need:
Potatoes
1/4 cup oil (I used olive oil*)
1 envelope French Onion Soup Mix
Preheat your oven to 350 degrees. First, rinse and dry your potatoes. Scrub them good. Cut them into wedges.
Next, place the potatoes into a ziploc bag(s). Poke a few holes in the bag. Place in the microwave for 5 minutes in order to get a jump start on cooking the potatoes.Watch them! If your bag looks like it's about to start melting (like mine did) take them out! If they last the whole time in the microwave, they should just be starting to become tender. If not, that's okay too. They finish up in the oven anyway. Once you take them out of the microwave, dump them in a bowl and pour the oil onto the potatoes. Coat them well.
Also, you want to add your onion soup mix at this point. Coat the potatoes well.
Place the potatoes on a baking sheet.
Bake them for about 45 minutes, or until tender.
*These were okay. I messed up and used olive oil which, I don't care for the flavor (it's all in my head though, I just don't like olives) next time I'll use canola. They were crisp.
Chris ended up eating every single thing, chicken and potatoes minus the two bites I tried and he also had corn on the cob!
