Pound Cake

I'm in trouble.

When I'm at home, and Chris is at work. I bake. I don't know what's gotten into me but it needs to stop, quickly because there are only two of us in this house.

This pound cake is from the devil. Not really, but it's really good and really easy to make.

PW's Perfect Pound Cake
What you need:
You need a Bundt pan*:

3 sticks of butter
3 cups of sugar
5 eggs (room temperature)
1 tsp. butter flavoring
2 tsp. lemon flavoring
3 cups all purpose flour

Oh and you also need 1 cup of the secret ingredient :)

You can use Sprite, or any other soda I suppose. I think I'll try a strawberry or fruit punch soda next time. See? I said "next time" like, I know I'll be in the kitchen again baking tomorrow. Geez. Anyway, throw the three sticks of butter into a bowl. A big bowl. Oh and preheat the oven to 325 degrees.

Cream the butter. Also known as "make your wrists cry if you don't have a red stand mixer." Hint hint. The butter should look like this when it's creamed.

When the butter looks like that, you want to add one cup of sugar and mix for a few seconds!


You'll do that three times, hence the three cups of sugar! Next, add the eggs, one at a time. Mix after each egg for a few seconds. Room temperature eggs are best, so I just sat mine out about an hour before I was ready to bake.


After you've added the five eggs, you're almost done! Now add your butter and lemon flavorings to the batter. Mix for a couple of seconds...You can see the butter flavoring, but not the lemon, I promise it's in there!

Okay, now if your wrist isn't yelling at you yet, just wait. It's coming. Add one cup of flour and mix for about ten seconds. Do this with each cup of flour...

Stupid flash makes the batter look bright yellow!

As you add each cup of flour, the batter becomes verrrrrry dense. It's so yummy though! Make sure you scrape down the sides of the bowl with a rubber spatula between each additional cup of flour. That way everything is evenly mixed. After all of the flour has been added, pour in a cup of your Sprite.

I just poured in the Sprite and then mixed it for a few seconds. I only have two hands, and no stand mixer. Make sure you are keeping the sides of your bowl scraped down so everything is incorporated. Now dump the batter in the Bundt pan and it goes in the oven for about an hour. Mine took longer. My oven is bipolar though.

When it's done it should look like this.

Right after you take it out of the oven, invert it onto a plate so that it can fall out and look all pretty and stuff. I didn't take a picture of mine when I did that because mine wasn't pretty. But it sure tasted good! What? Yours came out perfect the first time? What's your secret?!

*Be sure to grease and FLOUR your Bundt pan or your cake will not come out. I greased, but forgot to flour and it came out, but all of the crunchy yummy outer layer stayed in the pan...

looks nice...best thing to do (to get rid of it) either a) give it away or b) send it to work with chris haha they will either a) love you or b) love chris LOL

at least thats what i do with all of the extra ive been cooking recently!

heh to "get rid" of the extra either send it to work or give it away -- either way ppl will either love you or chris LOL

thats been my strategy so far with the extra i have been cooking...or just have a get together at your place and send leftovers home w/ ppl!
