He was wanting pork chops the other day and I gave in. I'm sure he gets sick of chicken. So, I started digging around in my spice cabinet and throwing a marinade together for some baked pork chops. The turned out post-worthy.
Spicy Pork Chops
What you need:
1 inch (at least) thick pork chops I had 3 of them
1/4 cup canola oil
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/2 tsp. red pepper flakes
1/8 tsp. ground mustard
1/4 tsp. cayenne pepper
1/4 tsp. seasoned salt
Dash of pepper
I always pat dry the pork chops before I start messing with them. Do it, or don't. Poke a few holes in the chops with a knife. Next, dump every single ingredient EXCEPT FOR THE CHOPS into a bowl with a lid.
Mix until combined.
Throw in the pork chops and make sure they are covered with the marinade.
Put the lid on the bowl and marinate in the fridge for as long as you can, one hour or more. I did mine for six. Every once in a while, slosh the chops around just so they stay moist and covered in the marinade. When you're ready to cook them, preheat your oven to 350 degrees, and place a pat of butter on each pork chop. Throw a couple of ice cubes in as well. Cover with foil and bake in the oven for 30-40 minutes or until the chops are well done...depends on the thickness of your pork. If you want your pork chops to brown up a bit you can take the foil off the last 10 minutes of the cook time. I did this, and it dried them out a bit. They were still good though.
I served the pork chops with green beans and mac and cheese (gotta have my carbs).
