Picante Chicken

Here's an easy dinner recipe that even I didn't mind throwing together on a weeknight. Even better? It's fairly cheap.

What you need-
1 lb chicken tenderloins
1 jar (16 oz) picante sauce (I used Pace with the yellow lid)
1 can black beans (drained and rinsed)
Crushed tortilla chips (a couple handfulls)
Shredded cheese (as much as you like)
Sour cream for garnish


What you do-
Place the chicken into a baking dish. Pour the picante sauce over it. Add in the beans. Make sure you move the chicken around a bit so that it's well coated. Bake at 350 degrees for about 25 minutes, or until the chicken is done. Take the dish out of the oven and crush up a good amount of chips over the top. Then add as much cheese as you like. Throw it back in the oven to melt the cheese and then it's done.

I topped mine with sour cream and added even more chips. It was really good. The clean up was a breeze as well!
