Peanut butter cookies aren't my favorite. At all. But, I was in the mood to whip something up to take to Mount Pleasant with me and I already had everything in the pantry so here you go...
Peanut Butter Cookies
What you need:
1 stick butter-room temperature
1/2 cup creamy peanut butter
1/2 cup light brown sugar
1/2 cup + 2 tbs. white sugar
1 large egg
1/2 tsp. vanilla
1 1/2 cups flour
1 tsp. baking soda
1/4 tsp. salt
Preheat your oven to 375 degrees. Grab two bowls. In the first, smaller bowl, throw in the flour, baking soda and salt (combine with a fork). Put the butter, peanut butter, brown sugar, and 1/2 cup of sugar into the second (larger bowl).
Beat the contents of the larger bowl until light and creamy, about two minutes.
Once the batter looks like the picture above, add the egg and vanilla. Beat for about 30 seconds.
When the mixture looks like this, add in the contents of the smaller bowl (flour, baking soda, and salt) into the batter.
Beat on low until just combined.
When the batter looks like this, it's ready! Next, grab a small bowl and put the two tablespoons of sugar into it, oh, and you'll need a fork.
You probably didn't need a picture of that. Oh well. Scoop heaping tablespoons of the batter about two inches apart from each other on a baking sheet.
Dip the fork in the sugar and make a crosshatch design on each cookie with the tines of the fork. Like this-
Bake them in the oven for 8-10 minutes.
Voila! Peanut butter cookies.
This recipe makes about 3 dozen cookies.
