Next time I'll make half of this recipe since he only needed enough for five sandwiches and I don't eat it. This recipe makes a ton.
Pimiento Cheese
What you need-
1 pound cheddar cheese; grated
1 4-ounce jar diced pimientos; drained
1/2 cup mayonnaise
2 garlic cloves
1/2 teaspoon cayenne pepper (only if you like spice!)
Grate the cheese in a large bowl.
Please don't use pre-shredded cheese. It's nasty. If you grate your own it has a much better texture and the taste is much better as well. Not buying what I'm selling? Please do a side by side taste test, then you'll understand.
After the cheese is grated, peel and mince the garlic.
Once you've done that (which my fingers were all garlicky and I didn't get a picture of), throw it in with the cheese. You can add in the mayo and the cayenne at this point too. Don't mix yet.
These are pimientos. A pimiento is nothing but a small sweet red pepper, that is sweeter and more flavorful than a bell pepper.
Take the pimientos out of the jar and make sure they are diced pretty small. Drain off some of the liquid that they are packaged in.
Add the pimientos into the cheese bowl.
Now start stirring!
It should be creamy and smooth, definitely not runny. At this point you should taste it and adjust the seasonings. I don't like it, so I didn't taste it, and when I had Chris taste it, it was way spicy! And he likes spicy! So I just added a bit more mayo and cheese and he said it was good.
Chill in the refrigerator for a few hours before serving.
You can eat pimiento cheese on crackers, or make a sandwich out of it. That's what I did (for Chris). Pile it onto a slice of potato bread and enjoy!

hmmm I'm suspicious of this one. I am way picky when it comes to my pimento cheese. My grandma makes it for the holidays and we eat it with frito's or bread. Her's is velveta, condensed milk, pimentos and mayo. It's all melted and smooth. I hate the bought stuff with a passion.
I have never heard of melted pimiento cheese! I don't think that'd work for his lunches though. I don't like any kind of pimiento cheese that I've tried but the one you just described sounds more like a dip so I might have to check that out. :)
I'll have to find my recipe for you. It's pretty thick so you can use it for sandwiches though.
