Here is yet another successful recipe I found on Pinterest. These cookies are so good. And moist. And chewy.

What you need:
½ cups butter (softened)
1 cup sugar
½ tsp vanilla
1 egg
1 tsp lemon zest
1 Tbs fresh lemon juice
¼ tsp salt
¼ tsp baking powder
⅛ tsp baking soda
1-½ cup flour
½ cup powdered sugar

Preheat the oven to 350 degrees. Spray your baking sheet with non stick spray. In a large bowl, or stand mixer, cream together the butter and sugar. Next, mix in the vanilla, egg, lemon zest, and juice. Scrape down the side of the bowl and then add in the dry ingredients, except for the powdered sugar. Put the powdered sugar in a small bowl.
Roll about a tablespoon of dough around in the powdered sugar to form a ball. Place on baking sheet and bake 9 or so minutes. You want them to be barely brown. That way they are nice and chewy. Put them on a cooling rack to cool.
