This recipe, which is fairly healthy, only has three ingredients. It's so easy and good. I even ate three pieces, I never eat more than one and a half pieces of chicken at a time.
In my head, I could totally be a vegetarian. But then I want a cheeseburger.
Moving on.
What you need:
3 or 4 chicken breasts (I always use the tenderloins, 6 or 7 of them)
1/2 c basil pesto (I found some in the refrigerated section in the store where the fresh pasta/sauce is)
1/2 cup mozzarella cheese
Salt and pepper
What you do:
Are you ready for this? Preheat the oven to 350. Now, take 1/4 cup of the pesto and spread it on the bottom of the dish you'll be cooking the chicken in. Next, place the chicken on top of the pesto and season it with salt and pepper. Take the rest of the pesto and spread it on top of the chicken. Cover the dish with foil. Bake 25 minutes. The chicken should be nearly done. Sprinkle the cheese over the chicken and place it back in the oven, uncovered. Let the cheese melt/chicken finish cooking. Turn the broiler on for a couple of minutes at the very end to brown the cheese. Total cook time for the chicken should be around 30 minutes.
There will be a lot of juice in the dish, so you could serve with noodles or rice. I served mine with mashed potatoes (hey! I said we were cutting back on carbs, not cutting them out) and broccoli.
So easy. So good.
